  • 1/3 cup mayonnaise

  • 1/3 cup sour cream

  • 1 tablespoon lime juice

  • 1/3 cup grated cotija or Parmesan cheese

  • Chopped cilantro, optional

Instructions

  • Cook rice according to package directions and keep warm.

  • Season chicken with spices and salt.

  • Cook chicken in a skillet until fully cooked; rest and slice.

  • Cook corn in the same skillet until lightly charred.

  • Mix mayonnaise, sour cream, lime juice, and cheese to form sauce.
