1.5 lbs boneless chicken thighs or breasts, cubed
1 cup plain Greek yogurt
2 tablespoons lemon juice
1 tablespoon garlic paste
1 tablespoon ginger paste
1 teaspoon ground cumin
1 teaspoon ground coriander
1 teaspoon garam masala
½ teaspoon turmeric
1–2 teaspoons Kashmiri chili powder (or paprika)
1 teaspoon salt
1 tablespoon oil
Optional: red food coloring
Skewers (soaked if wooden)
Mix all marinade ingredients in a large bowl.
Add chicken and coat thoroughly. Cover and marinate for 4 hours or overnight.
Thread chicken onto skewers.
Grill, bake at 450°F, or use a grill pan until cooked through and slightly charred (about 15–18 minutes).
Rest briefly, then garnish with lemon juice and cilantro.
Serve with mint chutney or garlic yogurt sauce.
