1½ lbs Yukon gold or red potatoes, cubed
2½ tbsp olive oil, divided
1 tsp chopped rosemary or thyme
½ tsp paprika
1 tsp salt, divided
½ tsp black pepper, divided
1 small onion, diced
2 garlic cloves, minced
1 lb ground beef (85–90% lean)
½ tsp smoked or sweet paprika
3–4 cups broccoli florets
Preheat oven to 425°F. Toss potatoes with 1½ tbsp oil, herbs, ½ tsp salt, ¼ tsp pepper, and paprika. Roast 25–30 mins.
In skillet, sauté onion and garlic in 1 tbsp oil until soft. Add beef, salt, pepper, paprika. Cook until browned.
Steam broccoli until tender, 5–6 mins. Season lightly.
