A one-pan dinner featuring seared chicken, green beans, cherry tomatoes, and a rich balsamic glaze — ready in just 30 minutes.
2 large chicken breasts, boneless and skinless
2 cups cherry tomatoes
2 cups trimmed green beans
⅓ cup balsamic vinegar
1 tbsp honey
2 garlic cloves, minced
1 tsp Dijon mustard (optional)
2 tbsp olive oil, divided
1 tsp Italian seasoning
Salt and black pepper to taste
Optional: fresh parsley or basil for garnish
Season chicken with salt, pepper, and Italian seasoning.
In a large skillet, heat 1 tbsp olive oil over medium-high. Sear chicken 4–5 min per side. Remove and set aside.
Add remaining oil and garlic. Sauté 30 sec. Add vinegar, honey, and mustard. Simmer 2–3 min.
Add tomatoes and green beans. Nestle chicken into the pan. Cover and cook 7–10 min until chicken is cooked through and veggies are tender.
Spoon glaze over chicken, garnish with herbs, and serve.
Store leftovers in an airtight container for up to 3 days. Pairs well with grains or mashed cauliflower for a balanced meal.
