Traditional Moroccan msmen flatbread filled with savory spiced chicken, herbs, and optional cheese. Crispy, flaky, and perfect for snacks or light meals.
For Dough:
2 cups all-purpose flour
½ cup fine semolina (optional)
1 tsp salt
~1 cup warm water
Oil and melted butter for folding and cooking
For Chicken Filling:
1 tbsp olive oil
1 small onion, chopped
2 garlic cloves, minced
1½ cups cooked, shredded chicken
1 tsp paprika
½ tsp turmeric
½ tsp cumin
¼ tsp black pepper
Salt to taste
2 tbsp parsley, chopped
Optional: shredded cheese or chopped green olives
Mix flour, semolina, salt, and water to form a soft dough. Knead 10 mins. Divide into 8 balls, coat in oil, rest 30–45 mins.
Sauté onion in oil until golden. Add garlic, then chicken and spices. Stir in parsley. Cool.
Stretch each dough ball into a thin square. Place filling in the center. Fold edges inward to form a square.
Heat skillet and lightly oil. Cook each msmen 2–3 mins per side until golden and crisp.
Rest dough for stretchability. Add cheese or olives for extra flavor. Freeze before cooking for easy prep.
