This low calorie banana bread is moist, naturally sweetened, and made with wholesome ingredients like oat flour, ripe bananas, and Greek yogurt. A light and healthy treat for any time of day.
2–3 ripe bananas (1 cup mashed)
2 eggs or flax eggs
¼ cup plain Greek yogurt or applesauce
2–3 tbsp maple syrup or honey
1 tsp vanilla extract
1¼ cups whole wheat or oat flour
1 tsp baking powder
½ tsp baking soda
½ tsp cinnamon
Pinch of salt
Optional: ¼ cup chopped walnuts or chocolate chips
Preheat oven to 350°F. Line a loaf pan with parchment or lightly grease.
Mash bananas in a bowl. Whisk in eggs, yogurt/applesauce, syrup, and vanilla.
In another bowl, mix flour, baking powder, soda, cinnamon, and salt.
Combine wet and dry ingredients. Fold in any add-ins.
Pour into loaf pan and smooth top.
Bake 40–50 minutes, until toothpick comes out clean.
Cool, slice, and enjoy.
To make vegan, use flax eggs and dairy-free yogurt. For extra flavor, add nutmeg or orange zest.
