Juicy, cheesy, and low in carbs, these keto-friendly mini meatloaves are stuffed with melty mozzarella and baked to golden perfection. Perfect for meal prep or family dinner.
1.5 lbs ground beef (80/20)
1 cup mozzarella cheese, cubed
2 eggs
⅓ cup almond flour
¼ cup grated parmesan
2 garlic cloves, minced
¼ small onion, finely diced or 1 tsp onion powder
1 tsp salt
½ tsp black pepper
1 tsp Italian seasoning
½ tsp paprika
Optional: 1 tbsp sugar-free ketchup or Worcestershire sauce
Preheat oven to 375°F. Line a baking sheet or muffin tin.
In a large bowl, mix ground beef, almond flour, eggs, parmesan, onion, garlic, and seasonings.
Divide into 6–8 portions. Flatten, add a mozzarella cube, and seal into mini loaves.
Place on baking sheet. Top with optional ketchup or extra cheese.
Bake 20–25 minutes or until internal temp is 160°F. Broil for 2–3 minutes for crispy top.
Rest 5 minutes before serving.
