Tender garlic butter beef bites slow-cooked to perfection. Rich in protein and flavor, this easy dinner is perfect for meal prep or cozy evenings.
2 lbs beef chuck roast or stew meat, cut into chunks
Salt and pepper, to taste
1 tbsp olive oil (for searing)
4–5 garlic cloves, minced
1 cup beef broth
1 tbsp Worcestershire sauce
1 tbsp soy sauce or coconut aminos
1 tsp Italian seasoning
4 tbsp unsalted butter
Optional: red pepper flakes, fresh herbs
(Optional) Sear seasoned beef in oil until browned on all sides.
Transfer to slow cooker. Add garlic, broth, Worcestershire, soy sauce, and Italian seasoning.
Cook on LOW for 6–8 hours or HIGH for 3–4 hours until fork-tender.
Stir in butter and optional extras during last 15 minutes.
Serve warm with sauce spooned over top.
Add mushrooms or onions in the last 2 hours if desired.
Serve over mashed potatoes, rice, or roasted vegetables.
Store leftovers in fridge up to 5 days or freeze for 2 months.
