A hearty, creamy taco soup made with lean ground meat, beans, veggies, and a spicy, protein-rich broth. Ready in 30 minutes and perfect for meal prep.

Ingredients

  • 1 lb lean ground turkey or chicken

  • 1 tbsp olive oil

  • 1 small onion, diced

  • 1 bell pepper, diced

  • 2 cloves garlic, minced

  • 2 tbsp taco seasoning

  • 1 (15 oz) can black beans, drained

  • 1 (14 oz) can fire-roasted diced tomatoes

  • 1 cup frozen or canned corn (optional)

  • 3 cups chicken broth

  • 4 oz cream cheese (or ½ cup Greek yogurt)

  • Salt and pepper to taste

  • Optional toppings: avocado, cilantro, cheese, tortilla chips

Instructions

  • Sauté onion and bell pepper in olive oil. Add garlic and cook 30 seconds.

  • Add ground meat and cook until browned. Drain if needed.

  • Stir in taco seasoning, beans, tomatoes, corn, and broth. Simmer 15 minutes.

  • Stir in cream cheese or Greek yogurt until creamy. Simmer 5 more minutes.

  • Serve hot with toppings of choice.

Notes

  • Can be frozen for up to 3 months.

  • Use full-fat Greek yogurt for better texture.

  • Add jalapeños for extra heat.
