1 lb lean ground turkey or chicken
1 tbsp olive oil
1 small onion, diced
1 bell pepper, diced
2 cloves garlic, minced
2 tbsp taco seasoning
1 (15 oz) can black beans, drained
1 (14 oz) can fire-roasted diced tomatoes
1 cup frozen or canned corn (optional)
3 cups chicken broth
4 oz cream cheese (or ½ cup Greek yogurt)
Salt and pepper to taste
Optional toppings: avocado, cilantro, cheese, tortilla chips
Sauté onion and bell pepper in olive oil. Add garlic and cook 30 seconds.
Add ground meat and cook until browned. Drain if needed.
Stir in taco seasoning, beans, tomatoes, corn, and broth. Simmer 15 minutes.
Stir in cream cheese or Greek yogurt until creamy. Simmer 5 more minutes.
Serve hot with toppings of choice.
Can be frozen for up to 3 months.
