1.5 lbs chicken breast or thighs, diced
1.5 lbs Yukon Gold potatoes, cubed
1 small onion, diced
4 garlic cloves, minced
1 tbsp olive oil
1 cup Greek yogurt or 6 oz cream cheese
1 cup whole milk
1 cup shredded cheddar cheese
1 cup shredded mozzarella
¼ cup parmesan (optional)
Salt and pepper, to taste
½ tsp paprika (optional)
1 tsp fresh thyme or rosemary
Chopped parsley for garnish
Preheat oven to 375°F. Boil or roast potatoes until fork-tender.
Sear chicken in oil until golden and cooked through. Set aside.
Sauté onion and garlic in the same pan until softened.
Stir in yogurt (or cream cheese) and milk. Add cheeses gradually and whisk until smooth.
Season sauce with herbs, salt, and pepper. Add cooked chicken and potatoes. Mix gently.
Top with extra cheese if desired. Bake 15–20 minutes until bubbly.
Let rest 5 minutes. Garnish with parsley and serve.
