¾ lb lean beef (sirloin, flank), thinly sliced
3 bell peppers (red, green, yellow), sliced
1 medium onion, sliced
2 cloves garlic, minced
1 tsp grated ginger
1 cup cooked brown or white rice
1 tbsp low-sodium soy sauce
1 tsp sesame oil
1 tsp rice vinegar or lime juice
1 tsp cornstarch (optional)
1 tbsp oil for cooking
Chili flakes or sriracha (optional)
Marinate beef with soy sauce, sesame oil, cornstarch, garlic, ginger, and vinegar for 15–60 minutes.
Cook rice or rice alternative and set aside.
Heat oil in a skillet. Sear beef in batches for 2 minutes per side. Remove.
Stir-fry onions and peppers until crisp-tender.
Return beef to pan, add more soy sauce and chili flakes.
Stir to combine and glaze evenly.
Serve over rice with optional garnishes.
Use tofu or tempeh for a vegetarian version.
