1 lb ground turkey
1 cup uncooked white rice
2 cloves garlic, minced
1 tsp grated fresh ginger
1 tbsp oil
Salt and pepper to taste
1 cup cucumber, sliced
1 cup shredded carrots
2 scallions, thinly sliced
Bang Bang Sauce:
½ cup mayonnaise
¼ cup sweet chili sauce
1–2 tsp sriracha
1 tbsp lime juice (optional)
Cook rice per package instructions. Set aside.
In a skillet, heat oil and cook garlic and ginger until fragrant. Add turkey, season, and cook until browned.
Mix Bang Bang sauce ingredients in a bowl and chill.
