Soft, oven-baked egg bites made with eggs, cottage cheese, and simple seasonings for a protein-rich breakfast.
6 large eggs
½ cup liquid egg whites
¾ cup cottage cheese
¼ cup plain Greek yogurt (optional)
½ cup shredded cheese
½ tsp salt
¼ tsp black pepper
Optional cooked vegetables or meat
Preheat oven to 325°F and grease a muffin tin.
Blend eggs, egg whites, cottage cheese, and yogurt until smooth.
Stir in cheese and seasoning.
Add fillings to muffin cups, then pour in egg mixture.
Bake in a water bath for 25–30 minutes until just set.
Rest briefly, then remove and serve.
Store refrigerated for up to five days or freeze for later use.
