Soft, oven-baked egg bites made with eggs, cottage cheese, and simple seasonings for a protein-rich breakfast.

Ingredients

6 large eggs
½ cup liquid egg whites
¾ cup cottage cheese
¼ cup plain Greek yogurt (optional)
½ cup shredded cheese
½ tsp salt
¼ tsp black pepper
Optional cooked vegetables or meat

Instructions

  1. Preheat oven to 325°F and grease a muffin tin.

  2. Blend eggs, egg whites, cottage cheese, and yogurt until smooth.

  3. Stir in cheese and seasoning.

  4. Add fillings to muffin cups, then pour in egg mixture.

  5. Bake in a water bath for 25–30 minutes until just set.

  6. Rest briefly, then remove and serve.

Notes

Store refrigerated for up to five days or freeze for later use.
