Juicy Thai-style chicken meatballs baked until golden and served with a sweet chili dipping sauce. Packed with herbs, garlic, and lime — perfect for dinner or appetizers.

Ingredients

  • 1 lb ground chicken

  • 1/2 cup panko breadcrumbs

  • 1 egg

  • 2 cloves garlic, minced

  • 1 tsp fresh grated ginger

  • 2 green onions, finely sliced

  • 1 tbsp fish sauce

  • 1 tbsp soy sauce

  • Zest of 1 lime

  • 2 tbsp chopped cilantro or Thai basil

  • Optional: 1/2 tsp red chili flakes

For Dipping Sauce:

  • 1/4 cup Thai sweet chili sauce

  • 1 tbsp lime juice

  • 1 tsp rice vinegar

  • Optional: minced garlic or ginger

Instructions

  • Preheat oven to 400°F (200°C). Line or grease a baking sheet.

  • In a bowl, mix all meatball ingredients until just combined.

  • Form into 1.5-inch balls and place on the sheet.

  • Bake 16–20 minutes until cooked through. Broil for extra browning if desired.

  • Mix dipping sauce ingredients and adjust to taste.

  • Serve meatballs warm with sauce.

  • Use almond flour for low-carb.
