Ingredients

4 cups cauliflower rice
1 tbsp olive oil
1–2 bell peppers, sliced
½ red onion, sliced
1 cup cherry tomatoes or fresh salsa
1 avocado, sliced or mashed
2 tsp taco seasoning (sugar-free)
1 cup lettuce or greens
½ cup shredded cheese (optional)
¼ cup sour cream or Greek yogurt (optional)
Fresh cilantro and lime, for garnish

Instructions
