A creamy, satisfying chicken Alfredo made with Greek yogurt, milk, and Parmesan — ready in 30 minutes and perfect for a low-calorie, high-protein meal.

  • 1 lb boneless, skinless chicken breast

  • 8 oz whole wheat pasta (or pasta of choice)

  • 1 tbsp olive oil

  • 3 garlic cloves, minced

  • ¾ cup low-sodium chicken broth

  • ½ cup nonfat or 2% milk

  • ½ cup plain nonfat Greek yogurt

  • ¼ cup grated Parmesan cheese

  • ½ tsp Italian seasoning

  • Salt and black pepper, to taste

  • Optional: red pepper flakes, lemon juice, fresh parsley

Instructions

  1. Cook pasta according to package directions. Reserve ½ cup water, then drain.

  2. Season chicken with salt, pepper, and Italian seasoning. Sear in olive oil for 6–8 minutes until golden and cooked through. Remove from pan.

  3. In the same pan, sauté garlic 30 seconds. Add chicken broth and simmer 2–3 minutes.

  4. Lower heat. Stir in milk, Greek yogurt, and Parmesan. Whisk until smooth and warm.

  5. Return chicken and pasta to pan. Toss everything together and adjust seasoning.

  6. Serve warm with garnishes of choice.
