A bold and satisfying grilled chicken burrito with creamy chipotle ranch, fresh toppings, and smoky Southwestern flavor. Easy to customize and perfect for meal prep or dinner.

Ingredients

  • lbs chicken breasts or thighs

  • 1 tbsp olive oil

  • 1 tsp chipotle chili powder

  • ½ tsp garlic powder

  • ½ tsp cumin

  • Salt and pepper

  • 4 large flour tortillas

  • 1 cup cooked rice

  • 1 cup black beans

  • 1 cup shredded lettuce

  • 1 cup shredded cheese

  • 1 avocado (optional)

Chipotle Ranch Sauce:

  • ½ cup mayo or Greek yogurt

  • ¼ cup milk

  • 12 chipotle peppers in adobo

  • 1 tsp lime juice

  • ½ tsp garlic powder

  • ½ tsp onion powder

  • Salt to taste

Instructions

  1. Season and grill chicken until cooked through. Rest and slice.

  2. Blend chipotle ranch ingredients until smooth. Set aside.

  3. Warm tortillas and prep fillings.

  4. Assemble burritos: rice, beans, chicken, lettuce, cheese, avocado, and sauce.

  5. Roll tightly. Optional: toast burrito in skillet until golden.

  6. Serve hot with extra chipotle ranch and lime.
