Creamy Rotel Pasta with Ground Beef is a spicy, cheesy one-pot meal featuring zesty tomatoes, tender pasta, and melted cheese — ready in under 30 minutes and perfect for busy weeknights.
1 lb ground beef
8 oz dry pasta (penne, rotini, or elbows)
1 (10 oz) can Rotel (undrained)
1½ cups shredded cheddar or 8 oz Velveeta
½ cup heavy cream or half-and-half
1–2 oz cream cheese (optional)
½ tsp each garlic powder, onion powder, paprika
Salt & pepper to taste
Optional toppings: green onions, cilantro, tortilla chips
Cook pasta until al dente. Drain and set aside.
Brown ground beef with spices in a large skillet. Drain fat.
Stir in Rotel and cream. Simmer for 3–4 minutes.
Add cheeses. Stir until melted and smooth.
Mix in cooked pasta. Heat through and adjust seasoning.
