Creamy pesto chicken delight features golden-seared chicken simmered in a luscious pesto-Parmesan cream sauce, perfect over pasta, rice, or veggies.
2 boneless chicken breasts or thighs
1 tbsp olive oil
1 tbsp butter
2 garlic cloves, minced
1 cup heavy cream
⅓ cup basil pesto
¼ cup grated Parmesan
Salt and pepper, to taste
Optional: 1 cup cherry tomatoes or 2 cups baby spinach
Optional garnish: fresh basil, extra cheese
Season chicken with salt and pepper. Sear in oil and butter until golden and cooked through. Set aside.
Sauté garlic (and optional tomatoes) in the same pan for 30 seconds.
Add cream, pesto, Parmesan, salt, and pepper. Simmer until thickened.
Return chicken to skillet and coat with sauce. Simmer 3–5 minutes.
Serve hot over pasta, rice, or greens. Garnish with basil or cheese.
For a lighter version, use half cream and half broth. Spinach or kale can be stirred in at the end for extra nutrients.
