Creamy pesto chicken delight features golden-seared chicken simmered in a luscious pesto-Parmesan cream sauce, perfect over pasta, rice, or veggies.

Ingredients

  • 2 boneless chicken breasts or thighs

  • 1 tbsp olive oil

  • 1 tbsp butter

  • 2 garlic cloves, minced

  • 1 cup heavy cream

  • ⅓ cup basil pesto

  • ¼ cup grated Parmesan

  • Salt and pepper, to taste

  • Optional: 1 cup cherry tomatoes or 2 cups baby spinach

  • Optional garnish: fresh basil, extra cheese

Instructions

  • Season chicken with salt and pepper. Sear in oil and butter until golden and cooked through. Set aside.

  • Sauté garlic (and optional tomatoes) in the same pan for 30 seconds.

  • Add cream, pesto, Parmesan, salt, and pepper. Simmer until thickened.

  • Return chicken to skillet and coat with sauce. Simmer 3–5 minutes.

  • Serve hot over pasta, rice, or greens. Garnish with basil or cheese.

Notes

For a lighter version, use half cream and half broth. Spinach or kale can be stirred in at the end for extra nutrients.
