12 oz high-protein pasta
1 lb lean ground beef
1 tbsp olive oil
1 small onion, chopped
3 cloves garlic, minced
2 tbsp tomato paste
1 cup Greek yogurt or blended cottage cheese
½ cup milk or light cream
½ cup grated Parmesan
1 tsp Italian seasoning
½ tsp paprika
Salt and black pepper, to taste
Cook pasta until al dente; reserve pasta water.
Brown beef in olive oil, breaking it apart.
Add onion and cook until soft.
Stir in garlic, then tomato paste and seasoning.
Lower heat and mix in yogurt or cottage cheese.
Add milk gradually, stirring into a smooth sauce.
Toss in pasta, adjusting with pasta water.
