1½ lbs baby potatoes, diced
1½ lbs chicken thighs or breasts
2 tbsp butter
1 tbsp olive oil
4–6 garlic cloves, minced
¾ cup heavy cream
¼ cup chicken broth
1 cup shredded cheddar cheese
½ cup grated Parmesan
1 tsp paprika
Salt and pepper to taste
Chopped chives or parsley (for garnish)
Preheat oven to 425°F. Toss diced potatoes with oil, salt, pepper, and paprika. Roast 25–30 minutes.
Season and sear chicken until golden and cooked through. Let rest and slice or shred.
