This cozy crockpot potato soup with sausage is hearty, creamy, and full of comforting flavor. Let your slow cooker do the work while bold sausage, tender potatoes, and creamy broth come together into the perfect cold-weather meal.
1 lb ground sausage (Italian or breakfast)
6–7 medium russet potatoes, peeled and diced
1 small onion, diced
3 garlic cloves, minced
4 cups low-sodium chicken broth
1 cup heavy cream or half-and-half
1½ cups shredded cheddar cheese
2 carrots, sliced (optional)
2 celery stalks, sliced (optional)
Salt and pepper, to taste
Fresh parsley or chives, for garnish
Brown sausage in a skillet over medium heat. Drain and transfer to crockpot.
Add potatoes, onion, garlic, carrots, celery (if using), and broth.
Cover and cook on LOW for 7–8 hours or HIGH for 4–5 hours, until potatoes are tender.
Mash some of the potatoes for texture. Stir in cream and cheese.
Cook on LOW for 20–30 more minutes until cheese is melted.
Season to taste and garnish with parsley or chives before serving.
For thicker soup, stir in a flour or cornstarch thickener in the last hour.
