Soft, golden rolls filled with gooey cheese and brushed with garlic butter. The ultimate side dish or appetizer — perfect for parties or pasta night.
For the Dough (or use 1 lb store-bought):
2 ¼ tsp active dry yeast
¾ cup warm water
2 cups flour
1 tsp salt
2 tbsp olive oil
1 tsp sugar
For the Filling:
1 ½ cups shredded mozzarella
½ cup cheddar or Parmesan
Optional: herbs, red pepper flakes
For Garlic Butter:
¼ cup melted butter
2 cloves garlic, minced
1 tbsp chopped parsley or 1 tsp dried herbs
Prepare dough and let rise until doubled.
Mix cheeses and optional herbs for filling.
Divide dough into 12–14 balls. Fill with cheese and seal.
Place in buttered dish. Let rise 20–30 mins.
Preheat oven to 375°F. Brush with garlic butter.
Bake 18–22 minutes until golden. Brush again with butter.
Serve warm.
Make ahead: shape and refrigerate overnight.
