For Dough:

  • 3 cups all-purpose flour

  • 1 tbsp sugar

  • 1 tsp salt

  • 1 tbsp instant yeast

  • 1 cup warm milk

  • 2 tbsp butter or oil

For Filling:

  • 2 chicken breasts, boiled and shredded

  • ½ cup mayonnaise

  • 2 tbsp chili garlic sauce

  • 2 green chilies, chopped

  • 1 tsp paprika

  • Salt and black pepper, to taste

  • 1 cup shredded mozzarella

Topping:

  • 1 egg (for egg wash)

  • Sesame seeds or nigella seeds

Instructions

  • Mix flour, sugar, salt, and yeast in a bowl. Add warm milk gradually and knead.

  • Add butter/oil and knead until smooth. Let rise for 1 hour.

  • Mix all filling ingredients in a bowl.

  • Divide dough into 8–10 balls. Flatten, fill with chicken mixture, and seal.

  • Place on tray, seam-side down. Let rise 15–20 minutes.

  • Brush with egg wash, sprinkle seeds, and bake at 375°F (190°C) for 18–22 minutes.

  • Cool slightly and serve warm.

Notes

  • Freeze for up to 2 months after baking.

  • Substitute with tuna or veggies for variation.

  • Use Greek yogurt to reduce fat.
