1 lb sirloin tips or flank steak, cubed
1 tbsp Cajun seasoning
2 tbsp olive oil, divided
1 tbsp butter (for steak)
10–12 oz rigatoni pasta
2 tbsp butter (for sauce)
2 tbsp flour
1½ cups whole milk or half-and-half
¾ cup grated Parmesan cheese
½ cup shredded mozzarella (optional)
1 garlic clove, minced
½ tsp black pepper
Salt, to taste
Optional: parsley, chili flakes for garnish
Season steak with Cajun spice and olive oil. Let sit 10–15 minutes.
Cook pasta in salted water until al dente. Reserve ½ cup pasta water.
Heat oil and butter in skillet. Sear steak tips for 2–3 minutes per side. Remove and tent.
In same skillet, melt butter, whisk in flour, and cook roux for 1 minute.
Slowly whisk in milk. Simmer until slightly thick. Add cheeses, garlic, pepper, and salt. Stir until smooth.
Add cooked pasta and toss to coat in sauce. Add pasta water if needed.
Serve pasta topped with steak tips. Garnish with herbs and cheese.
