A hearty, veggie-loaded cabbage soup with lean ground turkey or beans for extra protein. Light, comforting, and perfect for clean eating.

Ingredients

  • 1 tbsp olive oil

  • 1 lb lean ground turkey

  • ½ medium green cabbage, shredded

  • 1 onion, diced

  • 2 carrots, diced

  • 2 celery stalks, diced

  • 3 garlic cloves, minced

  • 1 can (14 oz) diced tomatoes

  • 1 tbsp tomato paste

  • 6 cups low-sodium chicken or vegetable broth

  • 1 tsp smoked paprika

  • 1 tsp thyme

  • 2 bay leaves

  • Salt and pepper, to taste

  • Optional: chili flakes, kale, beans, or quinoa

Instructions

  1. Brown turkey in olive oil, then remove and set aside.

  2. Sauté onion, carrot, and celery until softened. Add garlic and cook 1 more minute.

  3. Stir in tomatoes, tomato paste, broth, paprika, thyme, bay leaves, salt, and pepper.

  4. Add cabbage and return turkey to the pot.

  5. Simmer uncovered for 25 minutes until cabbage is tender.

  6. Stir in optional greens or beans. Remove bay leaves. Serve hot.

Notes

  • Freeze for up to 3 months.

  • Use lentils or beans for a vegetarian version.

  • Brighten with vinegar or lemon juice before serving.
