Creamy burrata, marinated tomatoes, and garlicky toast come together in this fresh, elegant bruschetta — perfect for appetizers, entertaining, or a special snack.
1–2 balls of burrata cheese
1½ cups cherry or Roma tomatoes, diced
1–2 tbsp extra virgin olive oil
1 tsp balsamic glaze (optional)
1 garlic clove, peeled
8–10 slices rustic bread or baguette
4–5 fresh basil leaves, torn
Salt and black pepper to taste
Toss diced tomatoes with olive oil, salt, pepper, and chopped basil. Let marinate for 10–15 minutes.
Toast bread slices in oven or grill pan. Rub each with a garlic clove while warm.
Tear burrata and place a spoonful on each toast slice.
Top with marinated tomatoes and juices.
Drizzle with more olive oil and balsamic glaze if using.
Garnish with basil and black pepper. Serve immediately.
Serve fresh and assemble just before eating. Use gluten-free bread if needed. Pairs well with wine or as part of a grazing board.
