4 boneless, skinless chicken thighs or breasts
4 tablespoons unsalted butter
3 garlic cloves, minced
1/2 cup chicken broth
Juice of 1 lemon
1 teaspoon Italian seasoning
Salt and pepper to taste
Preheat oven to 400°F (200°C). Lightly grease a 9×13-inch baking dish.
Season chicken with salt and pepper. Place in the baking dish.
In a saucepan, melt butter. Add garlic and cook 30 seconds. Stir in broth, lemon juice, and seasoning. Simmer 2–3 minutes.
Pour sauce over chicken.
Bake for 25–30 minutes or until internal temperature reaches 165°F (75°C).
Optional: Broil for 2–3 minutes for golden color.
Let rest 5 minutes, then serve with extra sauce.
