A soothing, anti-inflammatory chicken soup made with healing spices like turmeric and ginger, coconut milk for creaminess, and bone broth for nourishment. Perfect for immunity and digestion.

Ingredients

  • lbs chicken thighs or breasts

  • 1 tbsp olive or avocado oil

  • 1 onion, diced

  • 3 cloves garlic, minced

  • 1 tbsp fresh grated ginger

  • 2 carrots, chopped

  • 2 celery stalks, chopped

  • 1 tsp ground turmeric

  • ½ tsp black pepper

  • 1 tsp salt (to taste)

  • ½ tsp dried thyme

  • ½ tsp rosemary

  • 1 bay leaf

  • 4 cups chicken bone broth

  • 1 (13.5 oz) can full-fat coconut milk

  • 2 cups baby spinach or chopped kale

  • 1 tbsp lemon juice

Instructions

  1. Heat oil in a large pot. Sauté onion, garlic, and ginger for 3–4 minutes.

  2. Add carrots, celery, and spices. Cook for 3 more minutes.

  3. Pour in broth and add chicken. Simmer for 25–30 minutes.

  4. Remove chicken, shred, and return to pot.

  5. Stir in coconut milk and greens. Simmer 5–7 minutes more.

  6. Finish with lemon juice. Remove bay leaf and serve warm.

Notes

  • Use rotisserie chicken for a shortcut.

  • Freeze in individual portions for easy meal prep.

  • Top with fresh herbs or a swirl of coconut cream for serving.
