A healthy, quick, and delicious air fryer chicken recipe paired with seasoned vegetables — all cooked together in one basket for a perfect weeknight meal.

Ingredients

  • 1.5 lbs boneless, skinless chicken thighs or breasts, chopped

  • 34 cups mixed vegetables (bell peppers, zucchini, onions, broccoli)

  • 2 tbsp olive oil (divided)

  • 1 tsp paprika

  • ½ tsp garlic powder

  • ½ tsp onion powder

  • 1 tsp Italian seasoning

  • Salt and pepper to taste

Instructions

  1. Toss chicken with 1 tbsp olive oil, paprika, garlic powder, onion powder, Italian seasoning, salt, and pepper.

  2. Toss vegetables with remaining olive oil and a pinch of salt and pepper.

  3. Preheat air fryer to 375°F. Add vegetables to basket, place chicken on top.

  4. Air fry for 18–20 minutes, flipping or shaking halfway through. Ensure chicken reaches 165°F.

  5. Rest for 3–5 minutes. Serve with fresh herbs or lemon juice.
