A healthy, quick, and delicious air fryer chicken recipe paired with seasoned vegetables — all cooked together in one basket for a perfect weeknight meal.
1.5 lbs boneless, skinless chicken thighs or breasts, chopped
3–4 cups mixed vegetables (bell peppers, zucchini, onions, broccoli)
2 tbsp olive oil (divided)
1 tsp paprika
½ tsp garlic powder
½ tsp onion powder
1 tsp Italian seasoning
Salt and pepper to taste
Toss chicken with 1 tbsp olive oil, paprika, garlic powder, onion powder, Italian seasoning, salt, and pepper.
Toss vegetables with remaining olive oil and a pinch of salt and pepper.
Preheat air fryer to 375°F. Add vegetables to basket, place chicken on top.
Air fry for 18–20 minutes, flipping or shaking halfway through. Ensure chicken reaches 165°F.
